For theDamascus knifeORIBU series we use ainnovative Damascus powder steel.This is produced using a directional powder injection process with tiny, evenly distributed carbide particles without segregation. The high carbon content of 1.32%-1.42% ensures high hardness. The 2.9%-3.1% vanadium content, and the addition of the rare metal niobium, significantly improves the steel's rust and wear resistance. The steel's hardness is further enhanced after a vacuum/deep freeze heat treatment at62 HRC (Rockwell)stabilized.
Commercially availablefilleting knifehave an average hardness of 50 - 55 HRC, so they become blunt relatively quickly... And let's be honest, there is nothing worse than a bluntfilleting knife.
