- Extra virgin olive oil
Instructions for our tomato soup recipe
For our oven-baked tomato soup, you need 1 kg of ripe tomatoes. Halve these and place them in an ovenproof dish with the quartered onion and garlic cloves. It's practical to use a Santoku knife from JAPANCUT for this. With our Damascus knives, the ingredients are prepared in no time at all. Drizzle the ingredients generously with 2 tablespoons of olive oil. Season the mixture with salt and pepper to taste and then roast it in a preheated oven at 200°C for around 25-30 minutes until they are soft and lightly browned.
Once you have taken the ingredients out of the oven, let them cool slightly and then puree everything in a blender or food processor until smooth. If necessary, the ready-to-eat soup can be simmered briefly in a saucepan over a low heat. This allows the aromas to develop further for an intense taste. Then season the soup as needed.
Ladle the hot soup into bowls and garnish each serving with fresh basil and a generous drizzle of extra virgin olive oil. This velvety tomato soup is not only delicious, but warms you from the inside - the most important feature of any good soup. The tomato soup can be served with fresh bread to round off this simple yet flavorful recipe. Enjoy!
